New Year's Day Bean Soup

Recipe came from Pat O'Day's recipe vault. I believe it was originally from Helen Deniston. Suggest serving with crackers and a green salad.

dried mixed beans

water

ham or ham hocks

onion

Can tomatoes

juice of 1 lemon

salt to taste

pepper to taste

Optional

tsp

chili powder, or 1 pod of red pepper

brown sugar

Wash 2 cups dried mixed beans (the more variety, the better ... pintos, limas, norther, blackeyed peas, split peas, black beans, red beans, etc.)

Cover with water in a large kettle and add 1 T salt. Soak overnight and drain.

Add 2 quarts water, ham or ham hocks, and bring to a boil.

Simmer gently 2 hours.

Add 1 large onion chopped, 1 large can of tomato pieces, and either chili pepper or pod of red pepper.

Simmer 30 minutes.
