Cranberry Salad

apples, peeled, cored and diced

Prepare cranberries - 1 frozen package thawed about 1/2 way but not completely, and ground up in a meat grinder. Or chopped coarsely with food processor.

Prepare apples - coarsely chopped, either peeled or not.

Pour boiling water over gelatin in bowl and stir until dissolved. Stir in cold water. Refrigerate until consistency of unbeaten egg whites.

Combine all the ingredients and mix well, stirring into the gelatin mixture.

Pour into 3 quarts worth of mold(s). Chill until set. Unmold to serve.

Tips

Original recipe was a cut-out from a magazine. Did not call for orange juice. Specified pecans. Included 1/2 teaspoon salt for a quantity based on 1 package. What I'm including here is Pat O'Day's version. She leaves out the salt, and her version just says "nuts" instead of pecans.
